This has everything you could want with a chef’s knife, just with a smaller blade. This prep knife is perfect for any commercial or home kitchen. The I.O.Shen range of knives use the latest technology to craft a blade that is incredibly sharp while keeping it’s edge for much longer than other knives. Using the Triplex Steel Technology, I.O. Shen has overcome the common problem of knives that wear down quickly or are too brittle due to the strength of the steel. By using a layer of super hard steel (Rockwell 62), sandwiched between two layers of softer stainless steel (Rockwell 10) IO Shen Master Grade has produced the ultimate knife edge. Handcrafted by our Master, attained to 15 angle edge, slicing becomes easy and fun. Each I.O.Shen knife has been carefully handcrafted and took an average of 7 hours, hand finished.
